Eilean Donan and the Isle of Skye
When you think of Scottish castles Eilean Donan is probably one that comes to mind. I have visited the castle once before but really wanted to visit again especially since my parents were there. This was another big road trip day for us. We left Grantown-On-Spey early and started on our journey stopping at pullouts along the way to take in the scenery. The drive itself was absolutely stunning.
Once we got to Eilean Donan we toured the castle grounds. It is quite impressive to walk around the castle and read a bit about the history on placards. We meandered around the castle and checked out old staircases and took in the scenery of the loch.
After we toured the castle, I had big plans for the group. To go to All The Goodness Coffee & Bakeshop very appropriately named. I had only been there once before but since that visit I have dreamed of the possibility that maybe one day I would return. On my first visit to Scotland my husband and I stopped there for coffee and in their pastry case I saw a whisky ginger cake and thought “oh a snack might be nice” for the drive back to our bnb…..As soon as I took the first bite I regretted that we only bought one to share. It was so moist and flavorful with ginger but not in an overpowering way. It was the first time I had tried stem ginger and I have been hooked ever since. I even emailed them to ask about the recipe and while they didn’t give me their actual recipe as it is a family recipe they said that a traditional ginger loaf should give me similar results. I have worked on a few varieties and created a recipe of my own that is good but naturally not as good as theirs. Anywho I was SOOO excited to return. My mom even got a picture of me walking in and I look absolutely ecstatic. I knew that they might not have the whisky ginger loaf cake but I would be happy to try anything. They did have a stem ginger brownie and it was delicious! While it may look like a humble brownie you would be mistaken because the stem ginger really elevates the whole thing… so if you are in the area I cannot recommend this place enough.
After the bakery we headed to the Isle of Skye! We were hoping to take a ferry however, they were all booked so be sure to book in advance. We decided we would drive around for a bit and stop here and there taking in the views. We ended the day grabbing some fish-n-chips by the sea.
