Strawberry Pie Recipe
Strawberry Pretzel Pie
Ingredients
Filling
4 cups of strawberries chopped (reserve two cups)
1 tbs corn starch
½ cup of water
1 tsp vanilla
½ tsp almond extract
¼ cup of honey
1 tbs sugar
Crust
4 sheets of graham crackers
2 cups salted pretzels
¾ cup of melted butter
Whipped cream
½ cup heavy cream
1 tsp vanilla
Honey to taste
Filling:
Chop your strawberries and reserve two cups and set aside. Put two cups of your strawberries, water, and honey in a medium size pot. Bring to a boil and stir occasionally. Add your corn starch, be sure to make a slurry with your cornstarch to avoid clumps. Just add a little water about 2 tbs to your cornstarch and mix then add to the pot. Then add your vanilla. The mixture should be thick enough to coat the back of a spoon. This process may take between 20-30 min. Remove from stove and pour thorough a mesh strainer and let cool completely. Once it is cooled add your additional cups of chopped strawberries and set aside.
Crust:
For the crust blend the graham crackers and pretzles in a food processor until fine. Add the melted butter and press into a pie dish. Bake for 15 min or until golden brown. Let cool completely and then add your strawberry filling.
Whipped Cream:
For the whipped cream add the cream, honey, and vanilla into a bowl and use a hand mixer or standup mixer to get soft peaks. Add on top of your pie. Enjoy!
